The Parsnip is a biennial plant that is usually grown as an annual. Its long, tuberous root has cream-colored skin and flesh, and, left in the ground to mature, it becomes sweeter in flavor after winter frosts. In its first growing season, the plant has a rosette of pinnate, mid-green leaves. The 'All American Parsnip' variety is sweet, tender, and fine grained with a light yellow color. They are uniform and smooth with shoulders that are thick, two and one-half to three inches across and tapering to ten to twelve inches long. It also has fairly long roots, which are especially sweet when harvested in the fall; also frost resistant!
