The Harris Model parsnip is a great variety that has uniform white roots. The roots grow up to 12″ long with tender, sweet flesh. Parsnips grow similar to carrots and don’t handle mid-summer weather well. Parsnips should be planted in the early spring in well-drained soil. Place seeds in tilled and enriched soil right after the last frost. Delicious, tender, white 12-inch roots have a sweet flavor; refined in appearance. Great boiled, fried, or used in "Parsnip Bread." A good producer and popular variety.
