Horseradish root freshly harvested will be very firm and is still just fine at the firmness of an uncooked potato.

THIS IS FRESH HORSERADISH ROOT. THIS COMES FROM A LOCAL HORSERADISH FARM IN IL. YOU WILL RECIEVE EITHER A WHOLE ROOT OR SEVERAL PIECES OF FRESH ROOT WHICH EVER ADDS UP TO THE WEIGHT AMOUNT YOU PURCHASED.

The intact horseradish root has hardly any aroma. When cut or grated, however, enzymes from the now-broken plant cells break down sinigrin (a glucosinolate) to produce allyl isothiocyanate (mustard oil), which irritates the mucous membranes of the sinuses and eyes. Grated mash should be used immediately or preserved in vinegar for best flavor. Once exposed to air or heat it will begin to lose its pungency, darken in color, and become unpleasantly bitter tasting over time. Freshly grated horseradish emits fumes that can make your nose run and irritate your eyes, so prepare it in a well-ventilated area or even outside if your eyes are extremely sensitive. Wrap in a damp paper towel to store, place in a plastic bag and refrigerate. We  recommend you use it within 7 days. Horseradish will loose potency over time and become overly soft.  

Planting Questions ? You will need to research your particular USDA planting zone. There are 13 of them in the US. Once you determine your USDA planting zone you can look up the best time to plant in that zone.

Peel before using or grate with a sharp metal grater in the desired amount. If you're not planning on process your root within a day or two then wrap your whole root in fresh paper towels and put in a Ziplock bag. Place it in the back of your refrigerator. Process or plant with in 7days.
